For lunch I prepared for Patrick and me stir-fried velvet chicken with snap peas and lemon-ginger sauce found on Serious Eats except we had lime instead of lemon. This recipe was very frustrating to make because of poorly ordered, poorly written directions. For example, "combine remaining soy sauce, wine, and cornstarch in a small bowl" and later "combine remaining ginger, garlic, and scallions in a small bowl and set aside" forces you to stop where you are reading then look in multiple other locations for the quantities specified in the ingredients list and the quantities you have used while also doing the math to subtract amounts used from the amounts originally specified. If you are also halving or doubling the recipe, prepare for lots of mental gymnastics. If you printed the recipe duplex, then some of your listed ingredients are on the back side, so prepare to flip and flip and flip, subtracting and halving or doubling along the way. The recipe turned out okay except the pea pods were inedible. I used English peas, which seemed like a reasonable substitute for snap peas, but the pods turned out too rubbery and were hard to cut. Now I know: sugar peas and snap peas have edible pods. We tolerated it by splitting the pods, releasing the peas, and discarding the pods. The peas were fine. Water to drink. Continued working.
